Having impulse-bought some cheap beets and sweet potatoes from the local produce stand, I found out they go together really well. So, here's a simple soup recipe:
Ingredients
- onion
- beet
- sweet potato
- red lentils
- bay leaf
- salt
- cayenne pepper (if you like heat)
- cooking fat (olive oil, butter, whatever you normally use)
- broth or water+bullion
I used an onion, beet, and sweet potato that were all about the size of my fist, plus half a cup of lentils and 3 cups of water, and got enough soup for 2 as a main course.
Dice onion and add the cooking fat, salt, and cayenne pepper to the pan to start heating up. Add the onion and saute over low heat while you dice the beet and sweet potato. You'll have to stir occasionally, but it should be browning by the time you're done chopping. Add the beet and sweet potato, and saute for a few more minutes.
Add water/broth, lentils, and bay leaf. Simmer about half an hour, stirring occasionally. Puree if desired (remember to remove bay leaf).
